Lassen Traditional Cider brings a thoughtful, old-world approach to cider making in Chico. Each cider is unfiltered and unpasteurized, allowing the character of the fruit and the fermentation process to remain front and center.

The cidery focuses on heirloom apples sourced from regional orchards and uses traditional, wild fermentation methods rather than modern shortcuts. The result is cider that is dry, complex, and shaped by the season it comes from.

Their tasting room offers a space to sample rotating releases and learn more about the craft behind each pour. It is not uncommon to find Ben himself behind the bar, continuing the hands-on connection between maker, land, and glass.
